Soy Fettuccine with Pesto, Cherry Tomatoes & Sundried Tomatoes


A quick, fresh, and flavorful dish - perfect hot or cold!

Ingredients

  • 1 pack of Epik Soy Fettuccine, drained

  • 1 pack of Legrand pesto

  • 1 pint of cherry tomatoes, halved

  • ¼ cup of sundried tomatoes, thinly sliced

  • Olive oil to taste

  • Salt and pepper, to taste

  • Balsamic glaze, to taste

Preparation

  1. In a large bowl, add the soy fettuccine, Legrand pesto, and a drizzle of olive oil. Toss gently until the pasta is well coated.

  2. Stir in the cherry tomatoes and sundried tomatoes. Season with salt and pepper to taste.

  3. Serve your way

    • Cold: enjoy as a refreshing pasta salad. Add a drizzle of balsamic glaze, to taste.

    • Warm: sauté for a few minutes in a pan for a comforting, flavorful meal.

Hot tip : Top with grated parmesan style cheese and fresh basil leaves for an extra touch of flavor.
