Cold Ginger-Sesame Salad with Soy Linguine

Fresh, flavorful, and balanced — perfect as a light meal.
Ingredients
For the ginger-sesame dressing:

1/4 cup rice vinegar

1/2 cup toasted sesame oil

1/2 cup brown sugar

3/4 cup tamari (or soy sauce)

Gochugaru to taste (Korean chili flakes)

Minced fresh ginger, to taste

Minced fresh garlic, to taste

Finely chopped green onions, to taste
For the salad:

1 pack Epik Soy linguine, drained

1 red bell pepper, thinly sliced
-
1 carrot, thinly sliced
-
1 cucumber, thinly sliced

1 green onion, chopped
-
1 handful of fresh cilantro, roughly chopped
Preparation
- Place all dressing ingredients into a jar. Close the lid and shake well to combine.
- Slice the bell pepper, carrot, and cucumber. Chop the green onion and parsley.
- Add all the vegetables to a large bowl. Add the soy linguine. Pour the dressing over.

Mix gently until everything is well coated. Serve chilled.
