Cold Ginger-Sesame Salad with Soy Linguine


Fresh, flavorful, and balanced — perfect as a light meal.

Ingredients

For the ginger-sesame dressing:

  • 1/4 cup rice vinegar

  • 1/2 cup toasted sesame oil

  • 1/2 cup brown sugar

  • 3/4 cup tamari (or soy sauce)

  • Gochugaru to taste (Korean chili flakes)

  • Minced fresh ginger, to taste

  • Minced fresh garlic, to taste

  • Finely chopped green onions, to taste

For the salad:

  • 1 pack Epik Soy linguine, drained

  • 1 red bell pepper, thinly sliced

  • 1 carrot, thinly sliced

  • 1 cucumber, thinly sliced

  • 1 green onion, chopped

  • 1 handful of fresh cilantro, roughly chopped

Preparation

  1. Place all dressing ingredients into a jar. Close the lid and shake well to combine.
  2. Slice the bell pepper, carrot, and cucumber. Chop the green onion and parsley.
  3. Add all the vegetables to a large bowl. Add the soy linguine. Pour the dressing over.
  4. Mix gently until everything is well coated. Serve chilled.
