Soy Fettuccine Stir-Fry with Kimchi


A flavorful, lightly spicy dish full of texture — ready in minutes!

Ingredients

Stir-fry sauce:

  • 1/4 cup rice vinegar

  • 1/2 cup toasted sesame oil

  • 1/2 cup brown sugar

  • 3/4 cup tamari (or soy sauce)

  • Gochugaru to taste (Korean chili flakes)

  • Minced fresh ginger, to taste

  • Minced fresh garlic, to taste

  • Finely chopped green onions, to taste

Stir-fry base:

  • 1 pack of Epik Soy Fettuccine, drained

  • 1 carrot, sliced into thin matchsticks

  • 1 red bell pepper, sliced

  • 1 green onion, sliced

  • 1 garlic cloves, minced

  • 3 tbsp oil of your choice 

To serve:

  • Kimchi (we love the  Good Be Nice Kimchi !)
  • Thinly slice of the white part of the green onion.
  • Sesame seeds

Preparation

  1. Place all dressing ingredients into a jar. Close the lid and shake well to combine.

  2. Slice the carrot, bell pepper, and green onion. Mince the garlic.

  3. Heat olive oil in a pan. Add the vegetables and garlic, and cook until soft and lightly caramelized.

  4. Add the Soy Fettuccine and toss to combine with the vegetables.

  5. Pour in your stir-fry sauce and mix until everything is evenly coated.

  6. Remove from heat. Add the kimchi and sprinkle with sesame seeds and the white part of the green onion before serving.

Tip : A drizzle of sesame oil at the end elevates the flavor instantly
