Soy Fettuccine Stir-Fry with Kimchi

A flavorful, lightly spicy dish full of texture — ready in minutes!
Ingredients
Stir-fry sauce:

1/4 cup rice vinegar

1/2 cup toasted sesame oil

1/2 cup brown sugar
-
3/4 cup tamari (or soy sauce)
-
Gochugaru to taste (Korean chili flakes)

Minced fresh ginger, to taste

Minced fresh garlic, to taste

Finely chopped green onions, to taste
Stir-fry base:
-
1 pack of Epik Soy Fettuccine, drained
-
1 carrot, sliced into thin matchsticks
-
1 red bell pepper, sliced
-
1 green onion, sliced
-
1 garlic cloves, minced
-
3 tbsp oil of your choice
To serve:
- Kimchi (we love the Good Be Nice Kimchi !)
- Thinly slice of the white part of the green onion.

Preparation

Place all dressing ingredients into a jar. Close the lid and shake well to combine.

Slice the carrot, bell pepper, and green onion. Mince the garlic.

Heat olive oil in a pan. Add the vegetables and garlic, and cook until soft and lightly caramelized.

Add the Soy Fettuccine and toss to combine with the vegetables.

Pour in your stir-fry sauce and mix until everything is evenly coated.

Remove from heat. Add the kimchi and sprinkle with sesame seeds and the white part of the green onion before serving.
