  • 1 pack EPIK Fettuccini Soy Noodles
  • 3 Baby bok choy, halved length-wise
  • Green parts from one bun

Smoky, fresh, and zesty — plant-based tacos done right.

Ingredients 

Pico de Gallo

  • 1 large tomato, diced

  • ½ red onion, finely diced

  • ½ cup fresh corn kernels

  • ½ cup fresh cilantro, chopped

  • 2 ml chili powder

  • 5 ml cumin

  • Juice of 1 lime

  • Salt

Preparation

  1. Heat the captain in a dry pan until lightly golden.

  2. Mix pico de gallo ingredients, chill.

  3. Assemble tacos:

  • Spread sour cream on tortilla
  • Add cabbage, pico de gallo, tofu, jalapeño, and cilantro.
