Fresh Spring Rolls with Linguine Soy Noodles

Fresh, colourful, and protein-packed spring rolls in just minutes. Perfect for a quick lunch, light dinner, or any-time snack.
Ingredients:

1 pack of EPIK Soy linguine, drained

Rice paper sheets

1 avocado, sliced

1 cucumber, cut into thin strips

1 bell pepper, thinly sliced

1 carrot, julienned
-
Green onions, chopped
-
Fresh cilantro, chopped
- Dipping sauce of choice (tamari, peanut sauce, sweet chili sauce...)
Preparation:

Dip one rice paper sheet in warm water for a few seconds until softened.

Place it on a clean surface and add a line of soy linguine in the center.

Add avocado slices, cucumber strips, bell pepper, carrot, green onion, and a few cilantro leaves.

Fold in the sides, then roll tightly (like a burrito) until sealed.

Enjoy right away with your favourite dipping sauce.
