Fresh Spring Rolls with Linguine Soy Noodles


Fresh, colourful, and protein-packed spring rolls in just minutes. Perfect for a quick lunch, light dinner, or any-time snack.

Ingredients:

  • 1 pack of EPIK Soy linguine, drained

  • Rice paper sheets 

  • 1 avocado, sliced

  • 1 cucumber, cut into thin strips

  • 1 bell pepper, thinly sliced

  • 1 carrot, julienned

  • Green onions, chopped

  • Fresh cilantro, chopped

  • Dipping sauce of choice (tamari, peanut sauce, sweet chili sauce...)

Preparation:

  1. Dip one rice paper sheet in warm water for a few seconds until softened.

  2. Place it on a clean surface and add a line of soy linguine in the center.

  3. Add avocado slices, cucumber strips, bell pepper, carrot, green onion, and a few cilantro leaves.

  4. Fold in the sides, then roll tightly (like a burrito) until sealed.

  5. Enjoy right away with your favourite dipping sauce.
