Red Pesto Fettuccine - Hot or Cold

A quick, fresh, and flavourful dish — perfect hot or cold!

Ingredients

  • 1 pack of EPIK Soy Fettuccine, drained

  • 1 pack of red pesto (Legrand pesto the best!)

  • 1 pint of cherry tomatoes, halved

  • 1 handful fresh basil leaves, torn

  • Olive oil, to taste

  • Salt and pepper, to taste

  • Garnish: Balsamic glaze and grated parmesan-style cheese (optional)

Preparation

  1. In a large bowl, add the soy fettuccine, red pesto, and a drizzle of olive oil. Toss gently until the pasta is well coated.

  2. Stir in the cherry tomatoes. Season with salt and pepper to taste.

  3. Serve your way

    Cold: enjoy as a refreshing, flavorful pasta salad. Add fresh basil and a drizzle of balsamic glaze if desired.
    Warm: sauté in a pan for a few minutes for a comforting, rich red pesto pasta dish.

     

Hot Tip: Top with fresh basil and a sprinkle of parmesan-style cheese for extra flavour.
