Red Pesto Fettuccine - Hot or Cold

A quick, fresh, and flavourful dish — perfect hot or cold!
Ingredients

1 pack of EPIK Soy Fettuccine, drained

1 pack of red pesto (Legrand pesto the best!)

1 pint of cherry tomatoes, halved

1 handful fresh basil leaves, torn

Olive oil, to taste

Salt and pepper, to taste

Garnish: Balsamic glaze and grated parmesan-style cheese (optional)
Preparation

In a large bowl, add the soy fettuccine, red pesto, and a drizzle of olive oil. Toss gently until the pasta is well coated.

Stir in the cherry tomatoes. Season with salt and pepper to taste.

Serve your way
Cold: enjoy as a refreshing, flavorful pasta salad. Add fresh basil and a drizzle of balsamic glaze if desired.
Warm: sauté in a pan for a few minutes for a comforting, rich red pesto pasta dish.
