Mediterranean Pita Sandwich

A Mediterranean-inspired plant-based twist on the classic, fresh and tangy.

Ingredients

  • 1 pack of EPIK Mediterranean Tofu (cook per package instructions)
  • 2 pita halves (double layer for sturdiness)
  • Labneh or yogurt of choice

  • Red cabbage, finely sliced

  • ½ cup cherry tomatoes, halved

  • ½ cup cucumber, diced

  • ½ cup red onion, finely diced

  • Juice of 1 lemon

  • 1 cup fresh dill, leaves only

  • 1 cup fresh parsley, leaves only

  • Salt and pepper

Preparation

  1. Prepare the salad: combine tomatoes, cucumber, onion, lemon juice, dill, parsley, salt, and pepper. Set aside.
  2. Slice the pita and layer to reinforce.
  3. Spread labneh or yogurt inside, add cabbage, then salad, and finish with cooked tofu.
