Mediterranean Pita Sandwich

Ingredients
- 1 pack of EPIK Mediterranean Tofu (cook per package instructions)
- 2 pita halves (double layer for sturdiness)

Labneh or yogurt of choice

Red cabbage, finely sliced

½ cup cherry tomatoes, halved

½ cup cucumber, diced

½ cup red onion, finely diced

Juice of 1 lemon

1 cup fresh dill, leaves only

1 cup fresh parsley, leaves only

Salt and pepper
Preparation
- Prepare the salad: combine tomatoes, cucumber, onion, lemon juice, dill, parsley, salt, and pepper. Set aside.
- Slice the pita and layer to reinforce.
- Spread labneh or yogurt inside, add cabbage, then salad, and finish with cooked tofu.
