Smoked Meet Style Tofu Salad


Turn a simple salad into a complete meal with this Smoked Meat Style Tofu recipe, topped with fresh vegetables and a creamy dressing.

Ingredients

Salad

  • 540 ml (1 can) chickpeas, drained

  • 2 tomatoes, diced

  • 6 medium pickles, sliced

  • 250 ml (1 cup) sliced Kalamata olives

  • 200 g (1 block) cheese of choice, cut into small cubes

  • 1 medium carrot, grated

  • 1 iceberg lettuce, cut into large wedges

  • 240 g (Full pack) Smoked Meat Style Tofu

Dressing

  • 180 ml (¾ cup) mayonnaise of choice

  • 30 ml (2 tbsp) yellow mustard

  • 30 ml (2 tbsp) pickle juice

  • 60 ml (¼ cup) fresh dill, chopped

  • 5 ml (1 tsp) salt

  • Freshly ground black pepper, to taste

Preparation

  1. In a 500 ml (2-cup) sealable glass jar, shake together all the dressing ingredients.

  2. In a large bowl, combine the tomatoes, pickles, olives, vegan cheese, and carrot. Drizzle with the dressing and toss to coat.*

  3. Arrange 4 plates and place a wedge of iceberg lettuce on each. Top with the dressed vegetable mixture and ¼ of the Smoked Meat Style Tofu.

  4. Serve and enjoy.

*Keeps 3–4 days without the dressing.
